Leek, curly kale & pearl barley with bacon 

I don’t know about you but I’m starting to get bored of eating the same old thing for lunch everyday. I try my best to be good and take food to work but I’m now in search of some inspiration for tasty meals that will keep me full and healthy. Looking back through a couple of Delicious Magazines I came across this recipe that uses pearl barley – not an ingredient I usually keep in the cupboard but definitely one that intrigues me. This recipe works for lunch but I would also recommend it as a light dinner! Make the night before (approx 30 mins) and heat in the microwave for 4 minutes when you are ready to eat.

Makes 2 portions

Olive oil
75g bacon lardons
2 leeks
100g curly kale
2 garlic cloves
125g pearl barley
500ml chicken stock
1.5 tbsp crème fraîche
Finely chopped parsley

Heat some olive oil in a frying pan and add the leeks. Fry for 3-4 minutes then add the garlic, bacon lardons and pearl barley. Turn down the heat and fry for a further 2 minutes, then slowly start to add the stock bit by bit. As the pearl barley absorbs the stock add more to the pan (this should take about 15 minutes). Pour in the last quarter of the chicken stock and leave to simmer for a further 8 minutes. Stir the kale into the pan and simmer for the remaining 2 minutes. Season to taste, stir in the crème fraîche and add the parsley on top to serve.
