Sunday Sessions 

So this Sunday I decided to go back to my favourite home comforts – spaghetti bolognese with homemade garlic bread. I’m a sucker for a hearty pasta dish and this one I have to say reminds me of my childhood a lot. For those who know me will also know that I can’t get enough of garlic bread. I remember at a young age visiting my grandparents in Scotland and we had the family around in the garden. I helped my grandma do the cooking, I loved being in the kitchen learning the tricks of the trade. She made the most amazing homemade garlic bread, it was the best thing I had every tasted so much so that I ate most of the baguette before it hit the table…much to everyone’s dismay! Ever since I think garlic bread has been a favourite – however naughty it may be. So that was the inspiration for my dinner today and I’ve outlined the recipes for you to try below.

Spaghetti Bolognese 

This recipe should take about 30 – 40 minutes in total with extra time if you would like to leave the bolognese to sit for a couple of hours to build the flavour. Ingredients: Beef mince, onion, garlic, carrots, mushrooms, a drop of red wine, chopped tomatoes and seasoning, not forgetting the spaghetti. Method: I like to prep all of my ingredients before cooking so that I’m not running around the kitchen but if you prefer to cut as you cook then by all means. Dice the onion and garlic, peel the carrots and thinly slice and chop the mushrooms into smaller pieces. Heat some olive oil in a large pan and then add the onions and garlic. Fry off for a couple of minutes before adding the mince and then stir with a wooden spoon. When the meat starts to brown add in the carrots, mushrooms and seasoning and stir together. When ready, add in a drop of red wine and bring to a simmer. Once the liquid has disappeared add in the chopped tomatoes, stir and then leave to cook. At this time, add the spaghetti to some boiling water, add a pinch of salt and then leave to cook for 10 minutes or until soft.

Homemade garlic bread 

This one is easy and should only take about 5 minutes prep time. Ingredients: A baguette, unsalted butter, garlic finely chopped and flat leaf parsley diced. Method: Add the butter to a bowl and soften with the back of a spoon. Add in the garlic and parsley and mix well. Using a knife cut the baguette to make room for the butter to be added, careful not to cut all the way through. Spoon in the garlic butter evenly and the wrap in tin foil and bake in the oven for 8 minutes.

Serve the spaghetti bolognese in a bowl with a couple of slices of the bread to dip in the sauce, sprinkle some cheese on top and enjoy!
